Cracker Barrel Meatloaf

Ingredients:

2 eggs

2/3 cup milk

32 Ritz crackers, crushed

1/2 cup chopped onion

4 ounces shredded sharp cheddar cheese

1 teaspoon salt

1/4 teaspoon black pepper

1 1/2 pounds ground beef

1/2 cup ketchup

1/4 cup brown sugar

1 teaspoon mustard

Instructions:

1. Preheat Oven to 350°F (175°C).

2. In a large bowl, beat the eggs and mix in the milk. Stir in the crushed crackers, chopped onion, shredded cheese, salt, and black pepper.

3. Add the ground beef and mix until just combined. Avoid over-mixing to keep the meatloaf tender.

4. Shape the mixture into a loaf and place it in a greased baking dish or loaf pan.

5. Make the glaze: In a small bowl, mix ketchup, brown sugar, and mustard. Spread half of the glaze over the meatloaf.

6. Bake for about 45 minutes, then spread the remaining glaze on top and bake for another 15-20 minutes, or until the internal temperature reaches 160°F.

7. Let the meatloaf rest for 5-10 minutes before slicing.
