❗Ingredients:

4 cod fillets (about 6 oz each)
2 tbsp olive oil
2 tbsp butter
1/2 cup onion, finely chopped
4 cloves garlic, minced
1 cup cherry tomatoes, halved
1/2 cup white cooking wine (non-alcoholic option: use vegetable broth)
1/2 cup heavy cream
1/4 cup chicken or vegetable broth
1/4 cup fresh basil, chopped
Salt and pepper, to taste
Lemon wedges (for serving)

❗Instructions:

Season the cod fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat.
Add cod fillets to the skillet and cook for 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

In the same skillet, melt butter and add onions, cooking until softened. Add garlic and sauté for 1 minute until fragrant.
Stir in cherry tomatoes and cook until they start to soften, about 3-4 minutes.

Pour in white cooking wine (or vegetable broth) and let it simmer for 2-3 minutes, reducing slightly. Add heavy cream and broth, stirring until the sauce is smooth and slightly thickened.

Return the cod fillets to the skillet, spooning sauce over them, and let them warm through for 2-3 minutes. Stir in fresh basil before serving.
Serve hot with lemon wedges on the side.

Pair with crusty bread or a side of steamed vegetables for a delicious, balanced meal.
